Rabri | Quick milk based Sweet in a Microwave


To be able to come up with a dessert in under 10 minutes is nothing less than a miracle! :-D
What is Rabri?
It is a sweet, condensed milk based dish generally made by boiling milk on low heat for a long time until it turns brown. And then, sugar & other spices are added and it is served as dessert. In this Microwave version, we use Milk, Cottage Cheese & Condensed milk as main ingredients.
Trying a new way of presentation. Do let me know whether you like it or should I just stick to the previous format?

Ingredients
Amount
Milk
100 ml  or 1/2 cup
Fresh Grated Paneer / Cottage Cheese
100 grams  or 1/2 cup
Condensed Milk
50 ml  or 1/4 cup
Cardamom Powder
1 teaspoon
Saffron Strands
1 (I skipped)
Chopped Almonds
1 teaspoon
Method
Add Milk, cottage cheese, condensed milk, GHEE, chopped nuts, cardamom powder & saffron strands in a microwave safe bowl. If you have a sweet tooth, you can add a little sigar. Adjust according to taste
Mix well* (check note)
Microwave on high for 5 minutes.
Since it was too thick, I added around 4 tablespoons of milk & microwaved it for a minute. Mix well.
Allow to cool. Top it with some more nuts if you want
Decorate with some nuts & Serve Chilled.

Notes:
- Use fresh cottage cheese / paneer. It tastes better.
- * Do not over-mix or mix too fast as we want the Paneer / Cottage cheese to be crumbly & not blend fully with the milk.
- I have no high-low measurements in my MW. So I just directly set it for 5 minutes. But I realized that the Rabri would have been done by 4 minutes.
- Make sure you use a big Microwave Safe bowl. Coz if you use a tiny bowl, the milk will boil & pour out of the bowl! :-P
- You can skip the Ghee / Clarified Butter.

  22. Kavi .. I normally don't add extra salt other than what is in the masala. I do taste it and if I feel the brinjals need a pinch, I sprinkle on top.
    Use a tiny spoon and stuff the masala all the way inside and keep stuffing until you fill it up. While turning them while cooking, do it very gently. I use tongs to turn each one individually slowly. Some masala will still fall out, but there should be enough to give brinjal the flavor. Will update my post with this info too.

  27. hi kavi... i tried this the other day when i was bored and my brother was bugging me for something sweet... my mw took around 8 minutes to get done, but then it was absolutely droolworthy... keep up the good work... :)
