You'll need - (makes 4 servings)
Basmati Rice - 1 cup (If you don't get this, any rice, preferably long is fine)
Onions - 1 medium finely chopped (optional)
Bay Leaf - 1
Cinnamon - 2
Cloves - 4-5
Green Chilis - 4-5 whole chilis. cut vertically
Cumin Seeds (obviously!) - 2 tablespoons
Ginger-garlic paste - 1 teapsoon (optional)
Salt - 1-2 teaspoons (or as per taste)
Oil - 1 tablespoon
Method -
1. Wash the rice well
2. Heat the oil in a Pressure Cooker.
3. Add all the whole spices - Bay leaf, cloves, cinnamon, cumin seeds & mix4. Add the green chilis & fry for a minute. (Mom just makes a long slit vertically in the chili coz it makes it easier to spot & remove the chili)
5. Add the onions, ginger-garlic & sauté until light golden
6. Add salt & mix.
7. Then add the washed rice & sauté for around 2 minutes.
8. Add the water & mix well.
9. Pressure cook it until just ONE WHISTLE.
10. Open, mix well & serve with some side-dish (like Chole)
you do it everytime. Fab!
