Dabeli is traditionally sold on the streets of Gujarat and Mumbai. It is made with a sweet and spicy potato mixture which is filled into a small burger bun and then topped with onion, pomegranate, fresh garlic chutney and sév. Pomegranate gives the additional juicy tart-like taste to the Dabeli. (in fact, I would go to the extent of saying - if you can't find pomegranates, don't eat dabeli! :D)
DABELI RECIPE

(makes 12 Dabeli buns)
Ingredients
For the potato-filling
1 cup boiled & mashed potatoes
1 tbsp Dabeli Masala Powder
1/2 tsp cumin seeds (jeera)
2-3 tbsp dates-tamarind chutney
1 tbsp oil
1.5 tsp Salt (or as per taste)
Other ingredients
12 Burger buns or Pav
Butter or oil for toasting
To serve
1 finely chopped onion
1/4 cup roasted peanuts
1/2 cup chopped coriander or cilantro leaves
1/2 cup sev
2-3 tbsp fresh garlic chutney
2-3 tbsp Liquified sweet chutney
Method
I. For the Filling
- Heat the oil in a pan and add the cumin seeds. When they crackle, add the asafoetida, dabeli masala, potato, salt and 1/2 cup of water and mix well
- Remove from the fire, add the 2 tablespoons of khajur imli ki chutney and mix well. Divide into portions. Keep aside
II. How to proceed
Slice the burger buns into halves horizontally and toast in a pan using a little butter.
Place a portion of the filling on the lower half of each bun
Top with the chopped onion, peanuts, coriander, sev, pomegranate, fresh garlic chutney and khajur imli kichutney
