Aaloo Paratha (Potato Stuffed Tortilla)


To describe Aloo Paratha in one sentence: A tortilla with potato stuffing. It is another Indian recipe. Aloo Parathas are basically unleavened dough stuffed with a spiced mixture of mashed potato, which is rolled out and cooked on a hot pan with butter or oil.Everyone who know me know that Aloo Parathas are my weakness! In fact, everybody in school used to get an extra aloo paratha just for me! Sometimes, I was so tempted that I didn't even save a little bit for the friend who got Aloo Paratha for me! ;-) Such is my love for Aloo Paratha! In fact, there are many aunties in our society who call me home to feed me Aloo Paratha.! :-D I think I have sufficiently established how much I love Aloo Paratha!


Ingredients
Wheat Flour - 4 cups
Water - 2 cups (or as required for making the dough)
Salt - 1 teaspoon for the dough + 1teaspoon for the stuffing
Boiled & Mashed Potatoes - 2-3 medium sized
Ginger paste/grated - 1 teaspoon
Fresh Coriander Leaves - 1 tablespoon finely chopped
Green Chili - 3-4 finely chopped
Turmeric Powder / Haldi - 1 teaspoon
Roasted Coriander Seeds crushed - 1 teaspoon
Carom Seeds - 1 teaspoon
Rock Salt - 1 teaspoon (optional. Skip & add 1 extra teaspoon of normal salt)

Method -
1. To the wheat flour, add salt & water (little by little) to make a soft dough. Cover it with a moist cloth and let it rest for 15-20 minutes.

Meanwhile, make the filling -

2.To the mashed potatoes, add the green chili, salt, turmeric, coriander leaves, roasted coriander seeds CRUSHED, ginger paste, rock salt, carom seeds and mix well. Keep aside.

3. Make big balls out of the dough. Roll it out a little bit (small disk)
4. Keep some Potato filling on the dough. Enclose it from all 4 sides & press gently to seal all possible holes.
5. With the help of little flour, roll out into a thinner tortilla / paratha.
6. Put it on a pre-heated flat pan. Let it cook well on one side for 2 minutes before flipping over the other side to cook for another 2 minutes. You can add butter, clarified butter or oil in this step. I added 1/2 of a teaspoon of oil. But it tastes really good with a lot of butter!

Serve hot with tomato ketchup, pickle or salted curd! :-)
