Simple Potato Curry



I'm back with another Indian-Style Curry. I have used minimum oil and made it healthy. This curry is made in many Poojas (like Satyanarayan Pooja, etc). This recipe is mild. It doesn't have onions or garlic. Just potatoes & tomatoes!

When people hear potato, they immediately relate it to putting on weight. Many who are on "diets" avoid potatoes. I really find it weird! First of all, Potatoes are delicious! :-D Second of all, potato by itself is not fattening! Its only when you add a ton of salt, preservatives and totally ruin the structure by making chips, french fries, etc. that it tends to lose its basic nutritional value and hence, is *fattening*.  I've tried to retain as much as nutrition possible. And it takes just 15 minutes to make.

Ingredients - (makes 6 cups)
4-6 medium potatoes - boiled, peeled & mashed roughly
2 tomatoes - cut into cubes
3 Green Chilies finely chopped
1-2 teaspoons ginger paste
2 teaspoons -  Mustard Seeds / Raai
2 teaspoons - Asafoetida / Hing
2 teaspoons- turmeric / haldi powder
2 teaspoons- Red Chili Powder (more or less as per your taste)
2 teaspoons- Coriander Powder (Dhania powder) {Roast coriander seeds & powder finely}
2-3 teaspoons SALT (more or less as per your taste)
1 tablespoon COOKING OIL
Method -
1. Heat oil on a kadai / pan
2. When the oil is hot, add the mustard seeds & Asafoetida.
3. When mustard seeds start to burst, add the turmeric / haldi powder, red chili powder, coriander / dhania powder, 2 tsp ginger paste & mix well.
4. Then add the green chilies & tomato & mix well.
5. Add SALT and sauté for about 10 minutes. (until the oil starts to come out.)
6. When the tomatoes have reduced to half, add the mashed potatoes and mix well.
7. Add enough water to cover the whole mixture and boil for 2-3 minutes.

8. Your simple potato curry is ready!! ☻
Garnish with some coriander / celery / parsley leaves & enjoy with Roti (Tortilla), Rice, Puris (Fried Tortilla), bread, or just have it like that! :-D
