Another delicacy from the Indian cuisine, Corn Parathas are tasty and a filling meal. Yes, my mother- delighted that the vendor was selling corn so cheap, bought huge quantities!! And she didn't know what to do with them! Hence, the plethora of corn-related recipes on my blog! :-D Paratha is basically just a tortilla but it usually has some filling. In this case, it is sweet corn. I made the same filling I used to make corn kebab minus the potatoes.
Ingredients-
To make the dough -
Wheat Flour - 2 cups
Salt - a pinch
Milk - 3 tablespoons
Warm Water - as required (1 cup)
To make the stuffing -
Coarsely crushed corn kernels - 1/2 cup
Green Chili - 3-4 finely chopped
Onion- 1 (optional)
Salt - to taste
Red Chili Powder - 1 teaspoon
Oil - 1 teaspoon.
Method -
Make the corn-filling like how I've made in this recipe (corn kebabs). But I skipped the mashed potatoes this time.
I. To make the dough, take the wheat flour, add salt, 1 tsp oil & milk & mix well.
2. Use the warm water to make a soft dough. (knead well). Cover the dough with wet cloth for 20 minutes,
3. Divide the dough into balls. Roll out a small disk, keep 1 spoon of the corn-filling you prepared. Enclose the filling from all sides.
4. Slowly, with your fingers, spread the ball to make a disk shaped Paratha. Don;t keep too much filling inside or it will just come out while rolling it.
5. Put it on a pan with 1 teaspoon oil. Let it cook on one side for 1-2 minutes & then flip it over the other side for another 2-3 minutes. If you want, you can add butter too.
