Noodle Burrito | Noodle Frankie

Noodle Frankie is extremely popular in my college. A thin tortilla stuffed with red hot noodles and other spices and rolled like a Burrito makes it an absolute delight to munch on during breaks. Bit by the nostalgia bug, (I graduated in March) I decided to recreate the same roll at home. And I believe I almost succeeded. A bit of tailoring the recipe here and there would give me the perfect homemade Noodle Burrito I've been looking for. What you see here is the perfect Noodle Frankie recipe (I hope so!).
You need not add edible food coloring. I did it because that's exactly how the Frankie looks like in my college. And the noodle filling is really simple, devoid of any vegetables. But you might make Vegetable Chinese Noodles and stuff it into a tortilla. It'll still taste amazing! The Indian spices added along with the Chinese style noodles brings about a beautiful fusion of the two cuisines.

Noodle Frankie Recipe
Makes 2 burritos
Prep Time - 30 minutes
Cook Time - 5 minutes

Ingredients
A) For the Tortilla
All purpose flour - 100 grams
Salt - a pinch
Oil - 1 tablespoon
Hot Water - 30-35 mls

B) For the Roasted Garlic Tomato Chutney
Chopped Tomato - 1
Garlic Cloves - 6
Green Chili - 2
Salt - 1/4 teaspoon

C) Noodle Stuffing
Noodles or Spaghetti - 100 grams
Water - 2 cups
Salt - 1/2 teaspoon
Vinegar - 1/4 teaspoon
Soy Sauce - 1/4 teaspoon
Oil - 1 teaspoon
Red Food Color - 1-2 teaspoon (optional)

D) Others
Chaat Powder - 2 teaspoons
Chopped Onions - 1/4 cup
Chopped Capsicum - 1/4 cup

Method
A) Tortilla
1. Mix flour, salt, oil together.
2. Add water bit by bit until the flour is well combined. Knead tp get a soft dough.
3. Keep covered until use.
B) Chutney
1. Roast Garlic until light brown.
2. In a blender, add chopped tomatoes, green chilis, roasted garlic & blend till smooth.

3. Add the puree to a small pan & add salt. Heat for 5 minutes until the chutney has reduced to 3/4th its quantity.

C) Noodle Stuffing
1. Add enough water to noodles/ spaghetti and boil until soft. (Don't make it mushy!)
2. In a pan, heat oil & add cooked noodles, salt, vinegar, soy sauce & red food color and mix well. KEep aside until use.

D) Final Step
1. Roll the dough into a thin, round tortilla
2. Add into a griddle/ flat pan & add 1 teaspoon oil.
3. When one side is cooked, flip it over.
4. While the other side cooks, add enough Garlic chutney in the middle.
5. Arrange about 5-6 huge spoons of noodles in the center of the tortilla.
6. Sprinkle the Chaat powder, onions & capsicum along the noodles.
7. Roll both the ends into the center. Turn it & wrap the bottom with a tissue paper.

So.. there you go! Podar ka Noodle Frankie tayyar! (Podar college Noodle Frankie - all ready!) It does taste delicious. If you like spices, then add red chili powder and Garam Masala to the chutney. The possibilities are endless. Make any kind of pesto Pasta and stuff it in.. It is a real convenient dish to munch on the move. Enjoy!

  3. Oh man! I miss the roadside food in India, and the ones sold outside schools and colleges. And the chaat corners. And the food stalls. And I miss everything about India!!!!!!!! Can't wait to eat every damn thing possible in my next trip.
