Double Decker Pizza
Here’s a dish I came up with sitting on the upper deck of a double-decker bus in Mumbai. Hence the name: Double-Decker Pizza. It’s funny how the mind comes up with ideas when you least expect it to. But that’s how it is, heh? :) Once again, with Pizza, you never have to follow the recipe to the *T*. Play with the spices & include the veggies you love!

Malai Kofta | Veg Balls dipped in rich gravy (Microwave version)
Koftas are basically deep fried mixed vegetable balls that are dipped in a rich gravy just before serving. There are different types of Kofta Curries one can make. Of all the koftas, Malai Kofta is what we hear often. And it is one of my most favorite side-dishes ever!

The answer is when you start creating recipes in your head when you are in a lecture with the professor teaching something really important for the exam! :-D Okay, I'm not so proud of not paying attention in class, but I'm totally proud of what I've managed to create today. :P And rest assured, today will be the last time I day-dream about food. Microwave Chocolate Cake
Can it get easier than this? :-)
Recipe -
(source: Kailas Kitchen, my instinct! ☺)
Ingredients -
All purpose (refined) flour/ Maida - 125 grams (1 cup)
Powdered / Confectioners' Sugar - 1 cup (or as per taste)
Curd - 2 tablespoons
Milk - 1/2 cup / as per requirement
Melted Butter - 3 tablespoons
Cocoa Powder - 1-2 tablespoons
Baking Powder - 1/2 teaspoon
Baking / Cooking Soda - soda-bicarb - 1/2 teaspoon
Method -
1: Sieve together the flour, sugar, cocoa powder & baking powder.
* Sieving the flour mixture 2-3 times gives a good texture to the final cake.
2. Mix together soda-bi-carb / baking soda & curd well & keep aside.
3. Heat 1/4 cup water. Combine the butter and ¼ cup of hot water in another bowl and whisk well.
4. Add the flour mix & blend well.
5. Add the curd-baking soda mix & blend again.
6. Add Vanilla essence & beat well to get rid of lumps.
7. Make a smooth batter of pouring consistency. If the batter is too thick, add 2-3 tablespoons of Milk.
8. Grease a microwave safe dish & line it with butter paper.
9. Pour the batter into the bowl
10. Microwave on high for 5 minutes. Let it rest in the microwave for 1 minute.
11. Let it cool. (10 minutes) Invert on a plate & pull out the butter paper.
Your soft, spongy, chocolaty cake is rrrreeaaddyy!! ;-)

Microwaves help us save a lot of time in cooking! They are less messy too. Here, you'll find yummy dishes cooked wholly/partly in the Microwave. Some of them are not authentic recipes. I've adapted the recipe to suit Microwave cooking. But they taste almost as exactly as the real thing.. :-)
